On the Menu Today

Today I get to make meals for people again. I like doing this because it is a "ministry" thing I can be involved in, without leaving my children somewhere, it's something they can be present for and even sometimes help with. Today I lined up two families with one effort. We're especially excited about the meal for the family with the new baby, we sure love new babies!!

So on the menu:
Amanda's Wild Rice Soup ~ assuming the recipe wasn't eaten in the big email crash of '04
Homemade bread ~ I think I'll make kamut (I'm out of hard white wheat) with cooked oat groats. Does that sound weird? It's really good. Really.
Salad ~ nothing too exciting there, really. Requisite veggie dish. For some reason veggies IN the main dish don't seem to count. In my head.
Peanut Butter Pie ~ trying out a new recipe. Ha ha, I should say "using a new recipe for inspiration" since I have no intention of actually following the recipe. I'm not actually following Amanda's recipe, either, for that matter. It called for oodles of mushrooms. I don't do that. But I can say I've made it successfully before, without. Otherwise I wouldn't be making it. Ever again.

Now I just need to find that recipe.

And maybe take a shower, do laundry, and get working.

mmmmm, it all sounds delicious! Sorry I couldn't find Van's PB pie recipe for you!

That's ok, this was a nice one and turned out good. This was called (in it's unadulterated form) peanut butter silk pie. It had cream cheese and whipped topping for the 'light' pb part, but it also had a fudge layer ... I think it was good, even if it wasn't the same as Van's. Maybe we can raid the CC Kitchen for it. Unless Karin has it?? The soup and bread turned out well, too, I think. I should've seasoned the soup a little more. Ramble ramble ....
